This flavorful low fat, high protein Chicken recipe is a meal in itself. The Salsa is also a good source of Vitamin E, Niacin, Thiamin, and B6. Easy to prepare and  can be served right out of your slow cooker.
Another option could be to make as a  lettuce wrap omitting the flour tortillas or rice!


  • 2 pounds boneless, skinless chicken breast, trimmed
  • Salt and Pepper
  • 1 cup jarred Salsa
  • Juice of 1 fresh lime
  • 1/4 cup chopped cilantro
  • 2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • Cooked rice (1/2 cup per serving) or warmed flour tortillas, both optional

How to Make It

  1. Mist a slow cooker with cooking spray. Season chicken with salt and pepper and place in slow cooker. In large bowl, mix remaining ingredients , except for optional rice or flour tortillas. Pour over Chicken; turn to coat. Cover and cook on low until chicken is falling-apart tender , 3-5 hours.
  2. Turn slow cooker to warm and, using two forks, shred chicken.
  3. Serve over rice or with warmed flour tortillas, if desired.
