This flavorful low fat, high protein Chicken recipe is a meal in itself. The Salsa is also a good source of Vitamin E, Niacin, Thiamin, and B6. Easy to prepare and can be served right out of your slow cooker.
Another option could be to make as a lettuce wrap omitting the flour tortillas or rice!
2 pounds boneless, skinless chicken breast, trimmed
Salt and Pepper
1 cup jarred Salsa
Juice of 1 fresh lime
1/4 cup chopped cilantro
2 tablespoon chili powder
1 teaspoon cumin
1 tablespoon honey
3 cloves garlic, minced
Cooked rice (1/2 cup per serving) or warmed flour tortillas, both optional
How to Make It
- Mist a slow cooker with cooking spray. Season chicken with salt and pepper and place in slow cooker. In large bowl, mix remaining ingredients , except for optional rice or flour tortillas. Pour over Chicken; turn to coat. Cover and cook on low until chicken is falling-apart tender , 3-5 hours.
- Turn slow cooker to warm and, using two forks, shred chicken.
- Serve over rice or with warmed flour tortillas, if desired.
